Not all frozen seafood is frozen equally. Check the label for one of the following to determine how and when your product was frozen.
Fresh – The product is not and has never been frozen.
Chilled - Now more widely used by some in the industry to replace the word “fresh.” It indicates that the product was refrigerated, in other words, held at 30 to 34 degrees Fahrenheit.
Flash frozen - The product was quickly frozen either on board the ship or at a processing plant no more than a few hours after being caught.
Fresh frozen - The product was quick-frozen while still fresh, but not as quickly as being flash frozen.
Frozen - The product was placed in temperatures of 0 degrees Fahrenheit, or possibly lower, to preserve its quality.
Glazed - A frozen item that was dipped in water; the ice forms a protective glaze to help prevent freezer burn.
Fancy - In other words, “previously frozen.”
