Food Fact: A traditional delicacy in Iceland, Hákarl is fermented shark that is cured underground for up to 12 weeks and then hung to dry for several months. Hákarl is made from Greenland or Basking sharks, which are poisonous in their fresh state. The delicacy is characterized by a very strong ammonia smell, and has been called “the single worst, most disgusting and terrible tasting thing,” by Anthony Bourdain.
