Cheap Chow – Cauliflower Fritters with Cilantro Aioli
One of my favorite ways to be “cheap chic” in the kitchen is by using some good ol’ vegetables in some unconventional ways.
Let’s face it, vegetables are not sexy. But they are cheap, and they do harbor complex and natural flavors. A perfect foundation, if you will, for outstanding eats.
So let’s do our taste buds, wallets, and health a solid by taking veggies to the next level…
Cauliflower Fritters with Cilantro Aioli
Crunchy on the outside, soft and delicate on inside, these fritters can’t be any better. Oh wait, yes they can…when dipped into some zesty cilantro aioli!
(yield: 3-4 servings)
- 1 medium head cauliflower, grated
- 1/2 medium yellow onion, grated
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 1 tsp salt
- 1/4 tsp pepper
- 1 egg
- 1/2 cup flour
- 1/2 cup breadcrumbs
- canola oil, as needed
Aioli - 1 egg
- 1 cup cilantro
- 1 tbsp lemon juice
- 2 cloves garlic
- 1/2 cup canola oil
- 1/2 tsp salt
- 1/4 tsp pepper
In a large bowl, combine the cauliflower, onion, cumin, coriander, salt, pepper, and egg for the fritters. Stir in theflour until fully incorporated. Form mixture into golf-sized balls (the batter should yield about 13-15 fritters). Cover the bottom of a large non-stick skillet with canola oil to reach about 1/2 an inch up the sides of the pan. Place over medium-high heat. Once pan is hot, fry the cauliflower balls on three sides to form a triangular shape, about three minutes per side. Once golden brown and crispy, remove fritters from pan and place onto a paper-towel lined plate.
Make the Aioli: Pulse egg, cilantro, and lemon juice in a food processor until a green paste forms. With the processor still running, drizzle in the canola oil, in one continuous, slow stream. Season with salt and pepper.

Oh, I think I’ve found only the 2nd cauliflower recipe that my husband will eat! These look amazing…and that aioli is the perfect sidekick!
