Fresh Spinach Day!

July 16th is Fresh Spinach Day!

Like many people, my early impression of spinach was greatly shaped by Popeye the Sailor. Despite the fact that Popeye’s spinach gave him superpowers, I did not relish the thought of squeezing cold green mush from a can to acquire those powers myself!   Fresh spinach is tasty and retains all of its wonderful nutrition.  It is no coincidence that Fresh Spinach Day occurs in the peak of the summer.  Fresh spinach is abundant at this time, and a cool salad is the perfect meal on a hot summer day.  Try one of the lovely recipes below and get your own superpowers!
