June 3rd is Egg Day!
Frankly, I think that eggs deserve much more than a single day. Even a year may not be enough. Eggs are utilized in almost every type of cuisine, and are critical for baking. As a child, I considered them special because I was allowed to choose my own preparation - over easy. I would love to learn about your favorite egg-centric recipes. I missed Egg Day
Eggs are eggs-cellent… Sorry, been dying to use that. Love, love eggs… egg salad, egg drop soup, custard, quiche, omelet, fried, scrambled, sunny side up, egg curry… I can go on and on. Duck and quail eggs are delicious too.
I totally agree with you that eggs need more than a day – lately we have been ordering 35 eggs a week from a local farm and we actually eat them all in one week! Yay, I’m sort of obsessed with eggs
