Happy Waffle Day!

March 25th is International Waffle Day! I must confess that I was fascinated by the sheer diversity of the waffle universe.  Waffles are not a part of the Caribbean cuisine which I was raised with, nor have I ever been particularly drawn to them when exploring the international cuisine available in New York.  I found waffles which were sweet, savory, thick, thin, hot, cold and everything else under the sun.  Waffles have several nationalities, including Belgian, Scandinavian, Dutch and even Chinese (Hong Kong).  In fact, the only significant unifying factor which I could discern was the distinctive grid or waffle pattern of these little cakes created by the specialized irons used in making them.

Whether you are waffle aficionado or a novice, like myself, take a little time today to celebrate the waffle.  Some of the recipes listed below could be a good place to start.
