Happy Pecan Day!
March 25th is National Pecan Day! Pecans are native to North America and a staple for many Native American tribes in the southwest. For many people, myself included, they are associated with Southern cuisine. Pecans are very nutritious. These nuts contain 19 vitamins, have very little saturated fats, and are credited with playing a role in the reduction of cholesterol. In fact, “the Journal of Agriculture and Food Chemistry found that pecans rank highest among all nuts and are among the top category of foods to contain the highest antioxidant capacity, meaning pecans may decrease the risk of cancer, coronary heart disease, and neurological diseases such as Alzheimer’s.” So delight your doctor, as well as your taste buds, by trying some of the great pecan recipes below.
